Super Chocolate Chip Cookies [Gluten Free!]

Coming in hot with another gluten free recipe!! These chocolate chip cookies are for everybody (yeah they are that good) but especially for anyone that enjoys a cookie that is soft in the middle & a bit crunchy on the outside. Let’s dive right in!

To make these cookies you will need:

Ingredients

  • 2 1/4 cups all-purpose gluten-free flour

  • 1 tsp baking soda

  • 1 tsp salt

  • 2 ounces cream cheese (room temp)

  • 2 egg yolks (room temp)

  • 12 tbsp (3/4 cups) unsalted butter (room temp)

  • 1 cup packed brown sugar

  • 1/4 cup granulated sugar

  • 1 1/2 tsp vanilla extract

  • 1 cup semi-sweet chocolate chips (I use mini size)

  • 1 cup white chocolate chips (I use the standard chip size for these)

 

Preparation

  1. Preheat oven to 350°F .

  2. In a medium bowl, use a spoon to cream together butter, granulated sugar, cream cheese and vanilla extract. Then stir in brown sugar, baking soda & salt.

  3. Add in half the flour and then mix by hand. Add in the second half of your flour along with egg yolks once the first is well incorporated. Continue to mix by hand. If you prefer, a stand mixer can be used to combine all ingredients!

  4. Incorporate all chocolate chips throughout your cookie dough.

  5. With a standard size ice cream scoop, place out 6 rounded portions of dough on a 12x16 cookie sheet.

  6. Push down on each ball of dough to create even and flat cookies. Bake in oven for 18-22 minutes or until golden brown around the perimeter.

This recipe will yield ~12 cookies at approx. 4’’ in diameter.
