Easy Bake Egg Cups

In the spirit of easy recipes and quick meals, I present to you Emi Eats’ Egg Cups!! Otherwise known as mini quiches but without the crust. This is a great breakfast or brunch go to that can be as unique as you’d like. I personally love making these because there are some members of my family that are gluten and dairy intolerant, and this recipe gives you lots of room for flexibility. Let’s get started!

Total Time: 30 minutes

Prep Time: 10 minutes + Cook Time: 15 minutes

Ingredients

  • 6 large eggs

  • Pinch of salt

  • Pinch of sugar

  • 1/8 teaspoon black pepper

  • 1/3 cup of milk or milk substitute

  • Dash of Italian seasoning (optional)

  • 1/4 cup chopped kale (optional)

  • 3 strips of bacon (optional)

  • 24 small chunks / pieces of cheese (optional)

  • 1 teaspoon of oil

Preparation

  1. Preheat oven to Convection Bake at 350°

  2. Meanwhile, cut bacon into small strips and place in frying pan to brown and get crispy. As the bacon is cooking, rinse your kale out as necessary and segment into small pieces.

  3. Check on your bacon and flip / turn as needed. Crack eggs into a medium to large size bowl and add milk (I used Oatly as a milk substitute) prior to whisking. Once eggs and milk have been combined, add salt, pepper, sugar and any other desired spices. Whisk once more.

  4. Remove bacon from heat. While the bacon cools, lightly greases a 12 count cupcake pan with the oil of your choice - I like to use sunflower or avocado oil.

  5. Place your solid ingredients (bacon, kale, cheese) into each cupcake section, distributing evenly or segmenting into different flavor groups.

  6. Add even amounts of egg mixture into each section. I use approx. 2 ice cream scoops per section.

  7. Place try in the oven and let it bake for 15 minutes or until the edges of the egg cups are starting to turn golden / brown. Turn off oven and let the baking pan rest in the oven for 5 more minutes.

  8. Remove each egg cup from the pan, plate, and serve!

 
 

This recipe is super simple and actually fun to play around with! Kale was a new add for me this time and I liked the way it turned out. In this edition of egg cups I used munster and cheddar cheese, but provolone is also been a fan favorite in the past. I hope you enjoy this quick bake recipe!!
