Coconut Chocolate Chip Cookies

There’s nothing like a warm cookie with a cold glass of milk! Chocolate chip cookies are a fan favorite of course, but I’ve decided to add some coconut into the mix for some fun texture and flavor. Here’s a quick & easy recipe for a delightfully soft & rich dessert.

INGREDIENTS

1 & ⅛ cups all-purpose flour

½ teaspoon baking soda

½ teaspoon salt

½ teaspoon vanilla extract

1 egg (cold)

½ cup butter (1 stick) at room temperature

⅜ cup packed light brown sugar

⅜ cup granulated sugar

½ cup semisweet chocolate chips

½ cup unsweetened shredded coconut

Preparation

  1. In a medium to large bowl, sieve together flour ,baking soda and salt. Set aside

  2. Cream together butter, brown sugar and granulated sugar until thoroughly combined

  3. Add butter mix to your dry ingredients and beat together (I use a hand mixer) for about 1 minute. There should be no obvious dry patches or clumps of flour

  4. Beat in egg and vanilla. Batter should start to take on larger clumps

  5. Add in chocolate chips and coconut. Mix until chips are evenly distributed and then press down dough in the bowl

  6. Place cookie dough in fridge for 15-20 min

  7. Preheat oven to 375°F

  8. Place small domes of cookie dough 1 1/2 inches apart on baking sheet (I like to use a small ice cream scoop) and then push slightly down with your fingers

  9. Bake cookies for 12-15 minutes. Until edges are just turning golden. Recipe yields about 20 cookies
