What is not to love about a quality muffin? Nothing! I think there is no better muffin flavor than that of a banana bread muffin! They are simple, easy to make, and wonderfully delicious. 4 bananas, finely crushed
1/3 cup avocado oil
1 cup sugar
2 eggs, beaten
1 ½ cups flour
1 tsp baking soda
½ tsp salt
Preheat your oven to 350º F and line muffin pan with partchment cups. Mix oil and sugar. Add in the eggs and crushed bananas to the sugar mix. Blend well, but until combined. Be careful to not over-mix.
Once your batter is ready to go, pour the banana bread mix into your muffin pan. Transfer the pan into the oven. Bake for 20-25 min or until golden.
Let muffins cool for 5-10 minutes. Then they are ready to eat! If you aren't ready to eat all of these muffins at once, make sure you refrigerate the remaining portions to preserve them.
